Sweet Red pepper and yellow peppers, with some hot Jalapeno form the base. Lean Chicken adds protien and bulk provided by zucchini and mushroom. Serve with Rice and Prawn Crackers

Recipe Ingredients for Chicken and Pepper Chilli

6 oz chicken
3 oz yellow pepper
8 oz sweet red pepper
4 oz onion
2 cloves garlic
5 oz zucchini
1/2 oz jalapeno
5 oz mushrooms
1 pint water
400 g baked beans
1 tsp salt
1 tsp pepper
1 tbsp mixed herbs
1 tbsp olive oil

Recipe Directions for Chicken and Pepper Chilli

  1. Cook onion and garlic in oil until brown and then remove from pan.

  2. Cook chicken until browned

  3. Add onion and garlic to chicken

  4. Add Jalapeno, herbs, salt, pepper, cook for 1min

  5. Add all peppers, cook for 2min

  6. Add water, zucchini, mushroom cook for 10min

  7. Add can of beans, cook for 20min
