Diced Chicken Breast in a creamy, homemade Satay Sauce served on a bed of rice

Recipe Ingredients for Chicken Peanut Satay on Rice

200 g diced chicken breast
15 g Alpha One Rice Bran Oil
2 tsp garlic
2 tsp ginger
200 g red onion
100 g button mushrooms
2 tsp black pepper
100 g Eta Crunchy Peanut Butter
400 g TCC Coconut Milk
240 g Long Grain Rice

Recipe Directions for Chicken Peanut Satay on Rice

  1. Heat Oil in Frying pan.

  2. Add garlic, ginger, red onion and mushrooms.

  3. Add diced chicken, grind pepper over the heating meat and Brown.

  4. Add Crunchy Peanut Butter And stir until melted.

  5. Slowly add Coconut Milk.

  6. Bring to boil and then leave to simmer for 20-30 minutes.

  7. Cook Long Grain Rice and serve.
