Fluffy potato tops a creamy chicken and vegetable filling. For some reason had to use g not mL for the milk to get it working right - but as 1 mL weighs near enough 1g I'm not sweating it!

Recipe Ingredients for Chicken, pea & leek pie

400 g frozen chicken breast, thawed
1350 g potatoes, peeled and halved
13 g margarine
100 g semi skimmed milk
250 g leeks, thinly sliced,
600 g Frozen Peas
40 g margarine
40 g plain flour
750 g semi skimmed milk
340 g Mushrooms, sliced
2 chicken stock cubes

Recipe Directions for Chicken, pea & leek pie

  1. Preheat the oven to 200C, fan 180C, gas 6. Boil the potatoes, for about 10 minutes, until tender. Drain the potatoes and leave to steam dry in a colander for a few minutes. When dry, mash the potatoes with the stork and the milk to create a smooth mash.

  2. Saute the leeks and mushrooms in a little oil until soft. Transfer to a large ovenproof dish and add the chicken meat and frozen peas.

  3. Make up the white sauce using flour, stork, milk and chicken stock cubes and add to the dish. Mix well. Spoon the mashed potato on top, spread evenly and mark with a fork, then bake for 30?35 minutes until golden and bubbling.
