Recipe Ingredients for Chicken patties stuffed with red pepper

1 1/4 lbs
1/2 cup roasted red pepper
1/10 cup jalapeno
1 cup scallions
1 tbsp Italian dressing
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Chicken patties stuffed with red pepper

  1. Roast red pepper in the oven. (Place oven rack at the highest position, cut pepper in half place skin side up in a baking pan and Broil at high for 25 -30 mins --till pepper skin is blackened at places)

  2. Once out of the oven cover and let the peppers cool. Once cooled peel off the skin and chop.

  3. Add salt, pepper and italian dressing(or oil, vinegar and seasonings) to pepper mixture.

  4. Chop scallions and jalapenos and mix with chicken.

  5. Divide chicken into 4 parts.

  6. Then divide each part into two. Flatten out and put the red pepper mixture on one flattened portion. Cover with the other flattened portion. and seal the edges to form the patty.

  7. Repeat for each of the remaining 3 patties.

  8. Spray skillet with cooking spray and cook patty until done.
