It's a great fresh pasta recipe that can be made lighter by omitting the olive oil and grilling the chicken and vegetables instead of pan sauteeing them.

Recipe Ingredients for Chicken and Pasta with Tomatoes

4 1/2 ounces chicken breast (2 filets)
6 1/2 ounces penne pasta
1 medium tomato (diced in big chunks)
1 medium onion (thinly sliced)
1 garlic clove (minced)
1 tablespoon olive oil
2 tablespoons parmesan cheese
1 teaspoon dried basil
1/2 teaspoon dried oregano
2 dashes of salt
1 ounce of white wine (dry)
1/4 cup chicken broth

Recipe Directions for Chicken and Pasta with Tomatoes

  1. Cook pasta in lightly salted water until it is soft and al dente. Remove from heat and drain. Set aside on a saucepan or serving dish.

  2. Heat a skillet over medium heat. Add olive oil and cook garlic until golden (do not allow to burn).

  3. Season chicken filets with the salt and pepper.

  4. Add chicken filets to the skillet, placing the garlic on top of them. Cook chicken until brown on both sides and center is no longer pink. Remove from skillet and cut into bite sized pieces. Keep warm.

  5. Add onions and cook until golden and soft.

  6. Add chicken broth and wine to the onions. Allow to boild and then reduce heat. Simmer the onions in the broth and wine until liquid is reduced by half.

  7. Add onion mixture to pasta, add tomatos, add chicken, add oregano and basil.

  8. Toss to mix all ingredients well.

  9. Serve pasta and add a tablespoon of parmesan on top to each serving.
