Recipe Ingredients for Chicken Parmigiana

1 cup spinach, trimmed
140 g (1 small) chicken breast
1 1/2 tbs grated parmesan
1/4 cup tomato pasta sauce, heated

Recipe Directions for Chicken Parmigiana

  1. Heat oven to 200oC.

  2. Cook spinach in microwave until wilted.

  3. Cut pocket into chicken breast.

  4. Combine spinach and 1 tbsp parmesan, push into pocket.

  5. Coat chicken lightly with cooking spray and sprinkle with remaining parmesan.

  6. Place on a tray lined with baking paper and cook for 15 to 20 minutes or until cooked through.
