An easy and tasty chicken - can substitute eggplant for zucchini.

Recipe Ingredients for Chicken Parmigiana (Crockpot)

1 lb chicken
1 egg
1 tsp salt
1/4 tsp pepper
1 cup bread crumbs
2 small zucchini
7 1/2 oz pizza sauce
19 oz pasta sauce
4 slices mozzarella cheese

Recipe Directions for Chicken Parmigiana (Crockpot)

  1. Mix the egg, salt and pepper. Dip chicken into the egg mixture, then coat with bread crumbs, and saute.

  2. Slice zucchini and put in bottom of crock pot, add chicken, pour pizza and pasta sauce over everything. Cover and cook on low for 6 hours. Add mozzarella cheese and cook another 15 minutes. Can also sprinkle with parmesan cheese.
