Recipe Ingredients for chicken parmesan - super easy

8 oz boneless chicken breasts
6 cups crushed tomatoes
8 oz tomato paste
2 tsp garlic powder
1/2 cup chopped yellow onion
1/4 cup vegetable oil
2 cups breadcrumbs, whole wheat
1/2 cups parmesan
1/2 tsp fennel seeds
1/2 tsp seasoning salt
2 cups grated mozzarella cheese
1/2 cup water

Recipe Directions for chicken parmesan - super easy

  1. Cook onions in 1 1/2 tsp oil til transparent. Add tomatoes, paste, fennel seed, water, salt, garlic powder. Bring to a boil. Simmer for 15mn.

  2. Mix breadcrumbs, parmesan, basil.

  3. Pound chicken for even thickness. Pat down oiled breasts in breadcrumb mixture. Tuck ends in for more even cooking.

  4. Pour sauce in 13x9, plce breasts gently in sauce. In pre-heated oven 375, bake for 15mn, sprinkle with cheese, bake another 15-20mn or until meat reaches 160F. Let rest covered for 10, serve over rice
