Chicken Parmesan Recipe

Recipe Ingredients for chicken parmesan

1 1/2 lb fresh chicken breast, boneless skinless
1 1/2 c onions, sliced
1 1/2 c tomato sauce
1 T olive oil
5 cloves garlic, minced
2 T rosemary
1/4 t salt
1/2 t pepper
6 t parmesan cheese
2 T balsamic vinegar

Recipe Directions for chicken parmesan

  1. Coat chicken breasts (3 large breasts halves) with salt, pepper, rosemary and garlic. Press in spices with the back of a spoon. Let sit for about an hour in the fridge.

  2. Use an oven-proof iron skillet. Take chicken out of fridge about half an hour before cooking.

  3. Saute onions in 0.5 T oil until limp and caramelized. remove from skillet.

  4. In same skillet brown chicken in the second half of olive oil on both sides.

  5. Nestle sauted onions between pieces of chicken.

  6. Pour tomatoes sauce and balsamic vinegar over all. Heat to a gentle simmer on stove top.

  7. Sprinkle each piece of chicken with 2 t parmesan cheese. Place skillet in preheated 350 degree oven for 30 minutes.
