Family sized recipe for a light version of chicken parmesan, serve with pasta of choice.

Recipe Ingredients for Chicken Parmesan

1200 g chicken breast
822 g diced tomatoes, canned, no salt added
2 tsp garlic
1 tsp basil, dried
1 tsp oregano, dried
1 tsp rosemary, dried
1 tsp salt
1 tsp pepper
2 tbs flour, all purpose
50 g parmesan cheese

Recipe Directions for Chicken Parmesan

  1. Preheat oven to 425.

  2. In a shallow baking dish(es), place chicken breasts. Sprinkle with flour and 2 TBS of parmesan cheese. Salt and Pepper to taste. Bake for 15 minutes, or until starting to turn brown.

  3. Meanwhile, in a saucepan, bring tomatoes, garlic, and herbs to boil. Simmer until slightly reduced. Salt and Pepper to taste.

  4. Remove chicken from oven and pour sauce over top. Reduce oven temperature to 360. Bake 15 more minutes.

  5. Remove chicken from oven, top with remaining parmesan and place under broiler until bubbly.
