Adapted from a "Hungry Girl" recipe

Recipe Ingredients for Chicken Parmesan

1 lb boneless skinless chicken breast
30 g Fiber One Bran Cereal
60 g original egg beaters
56 g part skim mozzarella
1/4 tsp garlic powder
1/4 tsp onion powder
4 dashes black pepper
2 dashes white pepper
2 dashes salt
1/4 tsp italian seasoning
1/4 tsp dried chives
8 tbsp pizza sauce
3 sprays nonstick cooking spray

Recipe Directions for Chicken Parmesan

  1. split chicken into 3-4 oz filets, set aside

  2. in blender or food processor grind Fiber One into crumbs and mix in spices

  3. lightly coat each filet with first egg beaters and then crumb mixture

  4. lightly spray a baking sheet with nonstick cooking spray

  5. bake at 375 for 10-12 minutes

  6. turn chicken and continue baking until chicken is cooked through

  7. top each filet with 2 tbsp of pizza sauce and 1/4 of the cheese

  8. return to oven and continue baking until cheese is melted
