Recipe Ingredients for Chicken Parmesan Bundles

4 ounces Neufchatel Cream Cheese
10 ounces frozen chopped spinach, thawed, well drained
1 cup shredded mozzarella cheese
6 tablespoons Grated Parmesan cheese
12 ounces chicken breast
1 egg
4 servings Ritz crackers, whole wheat
192 grams spaghetti sauce

Recipe Directions for Chicken Parmesan Bundles

  1. Halve 3 chicken breasts length wise, then pound them to approximately 1/4 inch thickness.

  2. Preheat oven to 375. Mix cream cheese, spinach, 1 cup mozzarella cheese and 3 T Parmesan cheese until well blended; spread evenly over chicken breasts.

  3. Starting at one of the short ends of each breast, roll up chicken tightly. Set aside.

  4. Beat egg in shallow bowl. Mix remaining 3 T of Parmesan cheese and crushed Ritz cracker crumbs together in another shallow bowl. Dip chicken bundles in egg, then roll in crumb mixture. Place seam side down, in 13x9 inch baking dish sprayed with cooking spray.

  5. Bake 30 min or until chicken is cooked through (165 F). Serve topped with 2 T of heated spaghetti sauce.
