Chicken Parmesan, All You (magazine), modified

Recipe Ingredients for Chicken Parmesan, All You

12 oz chicken breast, about 2, boneless, skinless
1/4 cup white wine
8 oz tomato sauce
2 ounces mozzarella, coarsely shredded
1 tbsp parsley, chopped
1 tbsp Parmesan cheese, finely grated
1 tsp basil, dried (or 2 tbsp fresh basil)
1 tsp oregano, dried (or 2 tbsp fresh oregano)

Recipe Directions for Chicken Parmesan, All You

  1. Spray skillet with cooking spray, and cook chicken over medium heat, until brown on each side, and cooked fully through.

  2. Remove chicken to plate.

  3. Add wine and dried spices to skillet, over medium-high heat, and stir with a wooden spoon, scraping up any browned bits. Cook until syrupy, 1 to 2 minutes.

  4. Add tomato sauce and reduce heat to mediumlow. Add chicken; coat with sauce. Sprinkle mozzarella and parsley on top, cover skillet and cook until cheese is melted, 5 minutes.

  5. Transfer chicken to plates, sprinkle with Parmesan and serve.
