A pretty presentation of chicken breasts with sauteed vegetables. From Ann Willan's Look and Cook series of cookbooks.

Recipe Ingredients for Chicken in Parchment

1 lb. fresh boneless, skinless chicken breast
2 stalks celery, julienned
8 baby carrots, julienned
1 T oil
1/2 t salt
1/4 t pepper
5 T butter
1 T parsley, chopped
1/4 c flour, white unbleached

Recipe Directions for Chicken in Parchment

Remove any smallish pieces from the chicken breasts. Heat oil and 1T butter in skillet until bubbly. combine flour with salt and pepper. Dust chicken with flour mixture. Saute chicken breasts over medium high heat until browned on both sides. Remove from heat and cool. (chicken will not be completely cooked at this point; it will complete cooking in the oven.) chop any small bits of chicken and saute until cooked. Set aside. When chicken is cool, slice a "pocket" in the middle of each breast. Wipe out skillet. Melt 1 T butter in skillet, add julienned vegetables. Cook over medium heat, covered with a buttered parchment paper circle (butter side on vegetables.) Cook until tender, about 15 minutes, stirring occasionally. Do not let vegetables brown. when vegetables are cooked, taste and correct seasonings if needed. Add cooked small pieces of chicken. On a circle of parchment, place some of the vegetable mixture. Place a chicken breast on top of the vegetables. Place some vegetables in the pocket. Butter the top half of the parchment, and seal the packet. Continue this process with the remaining 3 breasts. Bake in a preheated 350 degree oven for 10 to 15 minutes.
