Recipe Ingredients for Chicken Paprikash-Topped Potatoes

4 potato medium (2-1/4" to 3-1/4" dia.) Potato, Baked, Flesh And Skin
4 thigh fillet Boneless Skinless Thighs
0.13 cup Wheat Flour, Whole-grain
2 tsp Paprika
0.75 tsp Salt, Table
1/4 teaspoon Red Pepper, Ground
1 Tbsp 37% Light Buttery Spread
0.5 cup, chopped Onions
8 oz Mushrooms
2 clove Garlic
0.5 cup Light
4 tbsp Fat Free Sour Cream
2 tbsp Parsley

Recipe Directions for Chicken Paprikash-Topped Potatoes

  1. Pierce potatoes with a fork; arrange in a circle on paper towels in microwave oven. Microwave at HIGH 16 minutes or until done, rearranging potatoes after 8 minutes. Let stand 5 minutes.

  2. Combine chicken, flour, paprika, salt and pepper ina large zip-top bag; seal bag and shake to coat.

  3. Melt butter in a lare nonstick skillet over medium high heat. Add chicken mixture, onion, mushrooms and garlic; saute 5 minutes. Add broth, and bring to a boil. Cook 6 minutes or until chicken is done and sauce thickens, stirring frequently. Remove from heat; stir in sour cream.

  4. Split poratoes open with fork; fluff pulp. Divide chicken mixture evenly over potatoes; sprinkle with parsley.
