Great for lunch or dinner. Precook the chicken ahead of time if you don't want to do it the same day. Slicing the breast to make it thinner is also a great way to cut down on calories. I usually get three slices of chicken out of one breast.

Recipe Ingredients for Chicken Panini - homemade

1/2 grilled chicken breast
1 tsp. extra virgin olive oil
1 slice american cheese
1/2 tsp. mayonnaise
1/4 tsp. barbeque sauce
2 slices italian bread

Recipe Directions for Chicken Panini - homemade

Mix mayonnaise and barbeque sauce to make sauce, set aside. Lightly brush outside of bread with evoo. Spread sauce on inside of bread. Place cheese and chicken on top of sauce and top with other slice of bread. Put in panini maker or grill.
