Hearty curry with a nice kick with chicken and assorted vegetables.

Recipe Ingredients for Chicken Panang Curry

1 cup, chopped or diced Chicken, Breast, Meat Only
1 tbsp Red Curry Paste
2 tbsp Peanut Butter, Smooth Style
1 serving Fish Sauce
1.25 serving Trader Joe's Harvest Hodgepodge
12 oz Coconut Milk

Recipe Directions for Chicken Panang Curry

  1. Slice chicken breasts in roughly 1-2 inch pieces and toss into sauce pan with cooking oil together with vegetables.

  2. Sautee together for 5-8 minutes on medium heat.

  3. Drain and set aside.

  4. Mix 14 oz coconut milk, 1 tbsp red curry paste, 2 tbsp peanut butter, 1 tbsp fish sauce, 1 tbsp paprika, red pepper flakes, and dash of basil.

  5. Mix in the sauteed chicken and vegetables into the sauce and simmer for 10 minutes.

  6. Serve over rice and garnish with basil/cilantro.
