Chicken Paillards with Mushroom Butter Sauce

Recipe Ingredients for Chicken Paillards with Mushroom Butter Sauce

10 oz chicken breasts
4 T flour
3/10 egg
1 T milk
3/10 c parmesan cheese
3 T butter
2 T olive oil
2 t salt
1/2 lb mushrooms
1/5 c chicken stock
3/10 c white wine
2 T thyme

Recipe Directions for Chicken Paillards with Mushroom Butter Sauce

Lightly salt and pepper paillards. Dredge lightly in flour, dip in egg, dredge again in flour and Parmesan. Meanwhile, melt butter and add olive oil Cook over medium heat in butter and olive oil three minutes per side; set aside. Raise heat, add chicken stock, wine, and herbs; let reduce a minute or so. Add mushrooms, cover for five minutes, remove lid until sauce is syrup-like. Plate chicken breasts, pour sauce over.
