Pad Thai with heretical western substitutions: lime juice for tamarind, brown sugar for palm sugar, and soy sauce for half of the fish sauce. The sauce should be prepared ahead of time in large batches - the amounts listed assume you use 1/2 cup each of fish sauce and soy sauce, 1/4 cup each of lime juice and brown sugar, and 2 tsp cayenne for a batch of sauce that will last for 8 servings. Recipe Ingredients for Chicken Pad Thai

4 oz rice sticks
1/2 lb chicken breast
3 tbsp vegetable oil
1 cup bean sprouts
1 medium onion
1 large egg
1/4 cup peanuts
2 tbsp fish sauce
2 tbsp soy sauce
1 tbsp brown sugar, unpacked
1 tbsp lime juice
1/2 tsp cayenne pepper

Recipe Directions for Chicken Pad Thai

  1. Prepare sauce

  2. Soak rice sticks in hot water until they start to soften, but do not allow them to cook through. Remove after 4 or 5 minutes and rinse with cold water.

  3. Heat 2 tbsp oil (wok should be as hot as you can get it)

  4. Add onion and fry until it starts to brown

  5. Add chicken and cook for 3 minutes

  6. Add rice sticks (noodles) and a ladle of sauce, continue stir-frying until chicken is cooked through

  7. Crack egg into the wok, let cook at the bottom for 30 seconds and then mix in.

  8. Add bean sprouts and half the peanuts, toss in the wok for a few seconds and remove from heat.

  9. Serve with remaining peanuts and lime wedges
