Easy pad thai recipe. leave out the peanuts or reduce them to bring down the calories. Also you can substitute egg white for the egg if wanted.

Recipe Ingredients for Chicken Pad Thai

227 g Rice Noodles
4 tbsp olive oil
1 egg
320 g boneless skinless chicken breast
1/2 cup peanuts, chopped
2 cups bean sprouts
1 cup red pepper
1 cup green pepper
1 cup mushrooms

Recipe Directions for Chicken Pad Thai

  1. Soak noodles according to package directions.

  2. Heat 2 tbsp of oil in wok over medium high heat. add egg and scramble lightly. add chicken. stirfry until cooked through.

  3. Add veggies. stirfry to desired crispiness.

  4. Add remaining 2 tbsp of oil then rice noodles and stirfry for 4-7 minutes. add store bought "Pad Thai Sauce" (be sure to account for it in your calories as its not in this recipe's nutritional info) and peanuts.

  5. stirfry 1 minute.

  6. stir in bean sprouts and garnish with scallion and lime wedges.
