1 c pesto
2 tbsp white wine vinegar
1/4 tsp salt
1 pinch fresh ground pepper
3 tbsp olive oil
1 lb orzo pasta
3 c. shredded cooked chicken breast
1 pint cherry tomatoes, halved
10 oz frozen spinach, thawed

Recipe Directions for Chicken & Orzo Salad

  1. Make the vinaigrette

  2. In a large bowl, whisk together the pesto, vinegar, the 1/4 tsp. salt and the pepper.

  3. Gradually whisk in the olive oil until smooth.

  4. Cook the orzo

  5. Bring a large pot of water to a boil over high heat. Add salt to water (optional) and the orzo. Cook, stirring occasionally to prevent sticking, until the pasta is al dente, according to the package instructions.

  7. Assemble the salad

  8. Add the chicken, tomatoes and spinach to the orzo and toss gently to combine, then serve. Serves 4.
