Recipe Ingredients for Chicken Orzo Salad

3/4 cup orzo
6 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
1 pound chicken breasts
10 oz baby spinach
1 bell pepper
1 cup kalamata olives
3/4 sliced toasted almonds
3 oz parmesan cheese

Recipe Directions for Chicken Orzo Salad

  1. Boil salted water. Cook orzo al dente. Drain and rinse under cool water. Return to pot, season with salt, pepper and 1 tbsp olive oil.

  2. Add 1 tbsp balsamic vinegar to shallow dish. Add the chicken, turning to coat. Refridgerate for 10 minutes.

  3. Whisk together 3 tbsp olive oil and 1 tbsp balsamic vinegar. Season with salt and pepper. Add spinach, chopped bell pepper and sliced olives. Do not toss.

  4. In medium skillet, heat 2 tbsp olive oil over medium-high heat. Season the chicken with salt and pepper and cook 5 minutes on each side. Let rest on cutting board for 5 minutes. Thinly slice.

  5. Add the orzo to the salad and toss. Top with the chicken, almonds and shaved parmesan.
