Light, refreshing summer salad. A family favorite!

Recipe Ingredients for Chicken Orzo with Cherry Tomatoes

5 oz orzo, uncooked
12 oz chicken breast, boneless and skinless, grilled and cut into strips
2 tbsp Olive Oil
2 tbsp lemon juice
1/2 cup red onion, chopped fine
1 pint cherry tomatoes, sliced
6 oz feta cheese, reduced fat
1/4 cup fresh basil, sliced thin

Recipe Directions for Chicken Orzo with Cherry Tomatoes

  1. Combine lemon juice and olive oil. Mix well. Set aside.

  2. Cook orzo according to package directions. Drain. Rinse well with very cold water until pasta is cool. Drain well.

  3. Combine orzo and lemon juice/oil mixture. Toss well.

  4. Add following ingredients in this order, mixing well each time: onion, chicken, tomatoes, feta cheese and basil.

  5. Serve as is. Or, for best results chill overnight and serve chilled.

  6. Tip: Use Perdue Original Boneless, Skinless, Cooked Chicken Strips to save time!
