Recipe Ingredients for Chicken in Orange Sauce, Pressure Cooked

24 oz boneless, skinless chicken breasts, approx 6 fillets
1 onion
1/2 tsp pepper
1/2 cup splenda
1 1/4 cup orange juice
1/4 cup lemon juice
2 tbs cornstarch
1 tbs orange zest, grated
1 tbs lemon zest, grated

Recipe Directions for Chicken in Orange Sauce, Pressure Cooked

  1. Add chopped onions, 1/2 cup water to PC, put in rack and place chicken breasts on it. Could add lemon/orange slices to water.

  2. Bring to high pressure and cook for 4 minutes (book says 8 , but seems too long). If frozen, add 1-2 minutes of pressure ;-)

  3. Let depressurize naturally, for up to 4 minutes. Then release pressure.

  4. Make sauce by defatting liquids, then stir in Splenda and lemon juice.

  5. Mix OJ and cornstarch and pour into pot.

  6. Cook over medium heat until thickened.

  7. Remove from heat and add zest.
