Chicken Orange Chowmein Recipe

Uses canned veggies as a shortcut. LOTS of veggies. Note: if you have a lot of extra liquid in the pan after stir frying the veggies, use all or part of it for the water when preparing the sauce. Serve with rice.

Recipe Ingredients for Chicken orange chowmein

8 oz water chestnuts (drained)
30 oz stir fry vegetables (drained)
179 g dole cole slaw mix
2 c diced celery
1 1/2 c diced onion
1 c sugar snap peas
1 navel orange (cube zest and fruit)
1 red bell pepper (diced)
1 tsp canola oil
13 oz chicken breast (cut into strips, raw)
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp sesame oil
1/2 c orange juice
4 tbsp Splenda no-calorie sweetener
1 tsp ginger
1/4 tsp allspice
1 tsp garlic powder
1 c water (or vegetable broth or reserved juices)
1 1/2 tbsp cornstarch

Recipe Directions for Chicken orange chowmein

  1. stir fry the zest in canola oil

  2. stir fry the chicken strips in a non-stick pan

  3. add the vegetables and stir fry a few more minutes.

  4. Stir together the soy sauce, vinegar, juice, oil, splenda, water, spices and corn starch.

  5. Add to pan and cook until thickened.

  6. Adjust spices to taste (we like to sprinkle on hot pepper flakes)
