Recipe Ingredients for chicken / onion crust-less quiche

4 large eggs
1 tbs. cream cheese
1 tbs. blue cheese
2 tbs. sour cream
1 medium onion
6 oz. chicken breast, roasted
3 tbs. cream
1 tbs. butter
1 tbs. olive oil

Recipe Directions for chicken / onion crust-less quiche

  1. Slice onion and saute in butter and olive oil.

  2. Dice cooked chicken breast into small bite-sized pieces.

  3. Whisk together all remaining ingredients.

  4. Once onion is slightly browned, add it and chicken to egg mixture.

  5. Grease a (giant) muffin tin (6 muffin cups). Ladle mixture into cups. Bake at 350* for approximately 30 minutes.

  6. Once the quiches are cooled, remove them from the muffin tin. Wrap in foil to keep in refrigerator or freezer. These are easily grabbed on the way out the door for breakfast, and are equally as good when served with a salad for lunch or dinner.
