A quickly thrown together tasty "mediterranean" chicken pasta

Recipe Ingredients for Chicken olives tomato basil pasta

450 g pasta
90 g shallots, chopped
5 cloves garlic
1 chicken breast
1/3 cup olive oil
1/2 cup basil leaves
12 kalamata olives (or more)
1/3 cup chopped sundried tomatoes
1/4 cup dry white wine

Recipe Directions for Chicken olives tomato basil pasta

  1. Pit half the olives; put in the mixer with 3 cloves garlic and the basil, with a quarter of the oil. Puree.

  2. Cut slits across the two chicken breast halves, and spread the puree on them. Set aside in the fridge for at least an hour.

  3. Remove the puree and set aside; grill the chicken.

  4. Meanwhile, cook pasta. Set aside and keep some of the water.

  5. Put a quarter of the the oil in the hot pan; stir in shallots and 2 cloves of garlic, and the puree. Stir fry, then add cut grilled chicken, sundried tomatoes and olives.

  6. Add wine and let it evaporate.

  7. Stir in pasta and enough water to help coat the pasta, while stirring.

  8. Salt and pepper to taste (lots of pepper) and drizzle with remaining oil before serving.
