Chicken-Olive "Chili" Recipe

We made this chili to be light on my stomach. The green salsa (made from tomatillos) is much lower in acid than tomato sauce.

Recipe Ingredients for Chicken-Olive "Chili"

2 breast, bone and skin removed Chicken, Breast, Meat Only
12 serving Organic Stuffed Green Olives
14.5 oz Petite Cut Diced Tomatoes
14.5 oz Petite Cut Diced Tomatoes
3 tablespoon Oregano
8 tsp Spices Ground Coriander
3 tbsp Rosemary, Dried
2 tbsp Onion Powder
1 tbsp Pepper, Black
14.5 oz Black Beans
1 cup Corn, Sweet, White
1 cup Beans, Snap, Green
1/2 cup slices Carrots
2 cup Rice, White, Long-grain, Regular, Cooked

Recipe Directions for Chicken-Olive "Chili"

  1. Puree one can of the tomatoes without draining it. (Or use a can of pureed tomato.)

  2. Pour the diced and pureed tomatoes into a large pot with the whole jar of salsa verde and all the spices.

  3. Start heating on the stove on low heat.

  4. Start cooking your rice, according the the instructions. The rice will be left separate until served.

  5. Cut up the chicken and add to the pot. We used what was left on a roast chicken we ate the night before (mostly breast meat).

  6. Cut the olives into slices and add to the pot.

  7. Bring the mixture to a simmer, then heat on med-low for the remainder of the time (about 10-15 minutes).

  8. Drain and rinse black beans, then add to the pot.

  9. Add carrots, green beans, and corn.

  10. Wait until you are satisfied with the amount of liquid that has boiled off, then serve in bowls over rice.
