Baked chicken nuggets from a low-fat, heart-healthy cookbook

Recipe Ingredients for Chicken Nuggets

1 pound chicken breast, boneless and skinless cut into pieces
2 tbsp olive oil
1 tsp garlic, minced
1/4 tsp cayenne pepper
1/4 tsp pepper, black
1 cup breadcrumbs, plain

Recipe Directions for Chicken Nuggets

  1. Mix olive oil, garlic, cayenne, and ground black pepper in a bowl. Stir. Cut up chicken into nugget-size chunks and dump into the bowl. Stir. Cover in plastic wrap and refrigerate at least 30 minutes.

  2. Preheat oven to 475. Dredge each nugget in breadcrumbs. Place on baking sheet -- spray with cooking spray if it is not non-stick. Bake 20 minutes. Serve wiht honey-mustard sauce.
