A French chicken dish I stole from Emeril Lagasse and changed a bit, namely subbing mushrooms for the apples. Because I felt like it!!!

Recipe Ingredients for Chicken Normandy

48 grams center cut reduced sodium bacon (6 slices), cut into 3/4-inch dice
1 1/4 lbs boneless, skinless chicken breast
1 tsp black pepper
1 tsp dried thyme
1 tsp marjoram
1 tsp paprika
1/8 cup white whole wheat flour
1/4 lb yellow onion, finely chopped
1 cup apple cider
1 oz brandy
1/4 lb baby portabella mushrooms, sliced
1 cup 1% milk
1 tbsp apple cider vinegar
4 tablespoons Smart Balance

Recipe Directions for Chicken Normandy

  1. In a large, heavy saucepan, cook the bacon over medium-high heat until crisp and the fat is rendered, 4 to 5 minutes. Remove and drain on paper towels. Drain off all but 1 tablespoon of the fat.

  2. Mix seasonings with flour.

  3. Dredge chicken in the flour to coat lightly, shaking to remove any excess.

  4. Add the chicken to the fat in the pan and cook over medium-high heat until golden brown on both sides and nearly cooked through, about 4 minutes per side.

  5. Remove and cover to keep warm. Add the onions and cook, stirring, for 3 minutes.

  6. Add 1/2 cup of the cider and cook, stirring, to deglaze the pan. Simmer until reduced by half.

  7. Add the remaining cider, bring to a boil and cook until reduced by half. Add the mushrooms and cook, stirring, until tender, about 2 minutes.

  8. Combine milk and lime juice, stirring constantly, to make buttermilk.

  9. Add the buttermilk and simmer until reduced by half.

  10. Reduce the heat to medium-low and add the Smart Balance, several pieces at a time, and cook, stirring, until each is incorporated.

  11. Return the chicken and any accumulated juices to the pan and cook until the chicken is heated through and cooked all the way, turning, 1 to 2 minutes.

  12. Remove from the heat and divide the chicken and sauce among 4 plates.

  13. Garnish each serving with the bacon and serve.
