Chicken Noodle and Veggie Soup Recipe

Chicken soup made with a tomato and homemade stock base and pre-cooked chicken. Add any seasonings you wish, I used curry, thyme, garlic powder, black pepper, bay leaf, and cayenne. I used boneless, skinless chicken thighs from a previous meal and trimmed the fat as well as whole wheat egg noodles.

Recipe Ingredients for chicken noodle and veggie soup

1 cup chicken, chopped
1 cup egg noodles
2 cups cabbage, chopped
1 medium onion
1 large carrot, chopped
1 teaspoon chicken bouillon
2 cups chicken stock
2 cups vegetable juice
1/2 teaspoon salt
2 tablespoons vegetable oil
3 mushrooms, sliced
1 medium tomato, chopped
3 cloves garlic, chopped

Recipe Directions for chicken noodle and veggie soup

  1. Saute the onions, mushrooms, and garlic then add tomato, seasonings and a few tablespoons of stock and simmer.

  2. Once tomatoes are cooked add the rest of the broth and the vegetable juice (I use Mott's Garden Vegetable). Add the carrot and cabbage to the soup and reduce heat to a simmer.

  3. Once the vegetables are tender add the egg noodles. When the noodles are about half done add the pre-cooked chicken. Serve and enjoy.
