Just like old fashioned chicken noodle, but half the cooking time. I typically buy a chicken, slice off one of the breasts for other use, and put the remaining 3/4 of the chicken in the stock pot for soup. Servings - 1.5 cups.

Recipe Ingredients for Chicken Noodle Soup - Rotisserie

1 1/2 lb rotisserie chicken (about 3/4 whole chicken)
1 quarts water, more if needed
1/2 quart low sodium chicken broth
1/2 large onion, chopped
1 clove garlic, minced
2 stalks celery, diced
1 carrot, halved lengthwise, then sliced 1/3 inch pieces
1 1/2 cups dry egg noodles
1/2 teaspoon McCormick Pinch Perfect Lemon Herb spice

Recipe Directions for Chicken Noodle Soup - Rotisserie

Place 3/4 rotisserie chicken (preferably cut in pieces, including skin and bones) in stock pot, with water sufficient to cover, and bring to a boil. Lower heat, simmering long enough for the chicken to start falling off the bones, about 20 minutes. Liquid will have reduced to about 3-4 cups. Remove chicken, skin, and bones from stock pot, placing in a dish to cool. While the chicken is cooling, add equal parts of water and chicken broth to increase liquid to approximately 8 cups, and bring to a boil. Add onion, garlic, celery, and carrots to broth. Cook approximately 10 minutes, until vegetables begin to soften. While vegetables are cooking, remove skin and bones from chicken, and discard. Pull chicken into small strings and add to broth mixture. Add noodles and spice, and cook for approximately 5-8 minutes and remove from heat. Noodles will finish cooking after soup is removed from heat. Makes about seven 1 1/2-cup portions.
