Great for sick times or cold weather. Freezes well. By using a larger vegetable/pasta ratio, our homemade versions can be filling, healthy, AND satisfying. Makes 7 servings, 6 generous servings, or 5 EXTREMELY generous servings.

Recipe Ingredients for Chicken Noodle Soup

21 g butter
420 g boneless, skinless chicken breast
35 g (about 7 cubes) dried chicken bouillon
2100 ml water
350 g onion
722 g celery
657 g carrot
90 g dried pasta, mass before cooking

Recipe Directions for Chicken Noodle Soup

  1. Pan-sear the chicken, lightly salted, in the butter in a hot skillet.

  2. Boil 1200 ml of the water with all 7 bouillon cubes. Once the water reaches a boil, add the onion, finely chopped.

  3. When the onions have started to become translucent and float, add the dried pasta and let it get softer, though not completely cooked, in the broth.

  4. Add the celery, chopped as you like it, and then add the chicken/butter from the skillet shortly afterward.

  5. Add the carrots about 2-3 minutes later.

  6. If desired, garnish with parsley.

  7. Optional: Use olive oil instead of butter for a healthier fat source. Use low-sodium bouillon cubes to cut back on the high sodium content. Add the vegetables earlier on for a more chickeny taste. I prefer the vegetables' individual flavors to burst out of the soup, so I add only the onions to the strong broth at the beginning.
