A delicious, quick homemade chicken noodle soup.

Recipe Ingredients for Chicken Noodle Soup

80 oz. low sodium chicken stock
12 oz. boneless, skinless chicken breast
4 stalks celery, sliced
5 medium carrots, sliced
1 cup parsnips, sliced
1/2 red pepper, diced
1 medium onion, diced
1 clove garlic, minced
1 tbsp extra virgin olive oil
2 tsp. salt
1 tsp. pepper
12 oz. egg noodles

Recipe Directions for Chicken Noodle Soup

Saute all the vegetables in 1/2 of the olive oil, starting with the carrots (because they take the longest to cook). Add 1/2 salt & 1/2 pepper to the veggies. Dice/Cube the chicken. Add remaining oil and saute the chicken. Add the salt & pepper. When chicken is almost cooked through, add the chicken stock. Bring chicken stock to a boil. Add noodles. Cook egg noodles 10 minutes. Top with fresh chopped parsley and/or dill.
