Homemade chicken noodle soup with extra wide egg noodles.

Recipe Ingredients for Chicken Noodle Soup

12 oz. dry egg noodles (extra wide)
1 1/4 lbs. boneless skinless chicken thighs, chopped
1/3 c. olive oil
5 servings stock cubes (vegan, no salt, only use 4)
2 c. onions, diced
3 c. carrots, sliced
3 c. celery, chopped
2 c. parsley, chopped
1 Salt and pepper to taste

Recipe Directions for Chicken Noodle Soup

Put oil in large stock pot, cook onions until translucent. Add chicken, cook briefly then add water, stock cubes, and carrots. Cook until carrots are tender, then add celery, noodles and parsley. Cook until noodles are done.
