home made chicken noodle soup and mashed potatoes

Recipe Ingredients for Chicken Noodle Soup

2 t vegetable oil
2 c carrots
2 c celery
2 Onions
2 lb chicken, chunked
16 oz corn
1 T salt
1/2 t pepper
8 oz egg noodle
1/2 t dried thyme
10 cups water
5 potatoes
1/4 c sour cream
2 t butter
1 T salt
1/2 T pepper
1/2 c skim milk

Recipe Directions for Chicken Noodle Soup

  1. in a 6-8qt saucepan, heat oil over med-high heat. add carrots, celery and onion; cook and stir 5 min.

  2. add chicken, water, corn, salt, and pepper

  3. bring to a boil

  4. cover and reduce heat and simmer 1 1/2 hrs

  5. Remove chicken from broth; set chicken aside. Skim fat from broth.

  6. Bring broth to a boil again; stir in noodles and thyme.

  7. Boil vigorously uncovered for 8-10 minutes.

  8. Remove chicken from bones; cut into bite size pieces and then stir back into broth

  9. enjoy
