Chicken Noodle Soup Recipe

I couldn't find a recipe I liked--so I made this one up. Hope it's good :)

Recipe Ingredients for Chicken Noodle Soup

1 tsp extra virgin olive oil
4 carrots, peeled and sliced
3 celery stalks, sliced
1 small onion, diced
32 ounces low sodium chicken broth
8 cups water
1 clove garlic, minced
2 tsp bay leaves
1 tsp thyme, dried
1 tsp parsley, dried
2 boneless skinless chicken breasts, cooked and shredded
8 ounces no yolks egg noodles, uncooked

Recipe Directions for Chicken Noodle Soup

  1. Boil chicken breasts in water for about 45 minutes. Remove from pot, shred chicken and set water aside.

  2. Heat olive oil in pot, add vegetables, garlic and spices. Saute until soft.

  3. Add chicken broth, water, and bay leaves. Bring to a boil for about 30+ minutes.

  4. Add chicken and egg noodles. Boil for about 10 minutes.

  5. Serve.
