Recipe Ingredients for Chicken Noodle Soup

1 large onion
6 stalks celery
1 tbs Garlic Minced (I used the stuff in the jar)
1 tbsp Extra Virgin Olive Oil
6 large carrots
2 cups peas, frozen
24 oz chicken breast meat
3 cups chicken broth
24 oz noodles

Recipe Directions for Chicken Noodle Soup

  1. Heat Oil in pot

  2. Chop oinion and celery add to pot

  3. Add minced garlic Sautee together till veggies are soft

  4. Meanwhile Chop Carrots into thin bite sized pieces and add to pot when the onion and celery are soft

  5. Add frozen peas at this time too

  6. Add chicken and fill to cover with chicken broth

  7. If using frozen breasts let them cook in the pot then remove, cut into bite size pieces and return to pot

  8. Season to taste with salt, pepper, celery seed and cilantro (easy on the last)

  9. Cook covered until chicken is done.

  10. Add uncooked noodles and cook till done.

  11. Broth can be thickened by mixing a little corn starch with water and adding to the broth while it is boiling. Let simmer till desired thickness.

  12. This would have been great without the noodles. My family likes them though. Next time I think I will make the noodles seperate.
