Just like mom used to make -- more effort since it uses fresh rather than canned chicken, but wonderful.

Recipe Ingredients for Chicken Noodle Casserole

16 oz Egg Noodles
26 oz cream of chicken soup
14 oz milk
24 oz chicken breast
1 c saltines
1/3 c Parmesan cheese

Recipe Directions for Chicken Noodle Casserole

  1. Dice raw chicken chicken breast and cook over low heat until completely cooked through. Salt and pepper to taste. A bit of olive oil cooking spray may be needed to keep the chicken from sticking to the pan.

  2. In a large mixing bowl, mix Cream of Chicken Soup and milk until smooth.

  3. Boil noodles per package directions until almost done. The noodles should be a little on the firm side.

  4. Drain noodles and add to bowl with soup and milk mixture. Stir thoroughly.

  5. Spread cooked chicken evenly along the bottom of the casserole dish.

  6. Layer noodle mixture on top of chicken.

  7. Crush saltine crackers and spread evenly over top of casserole. The crackers help keep the top layer of the casserole moist while cooking.

  8. Sprinkle with Parmesan cheese and garlic salt.

  9. Bake at 350 degrees until hot and bubbly. About 45 minutes.

  10. Alternatively, split ingredients into two smaller casserole dishes and freeze one to pop into the oven when you don't feel like cooking.
