A guilty pleasure in our family. We'd have it at least once every 2 weeks and now seeing the nutritional facts ... I'm debating ever having it again! Though if you can make the room for the calories and not feel guilty it's an absolutely brilliant meal!

Recipe Ingredients for Chicken Noodle Casserole

1 small onion, diced
1/4 c. butter
10 oz. chicken breast, I use 3 small skinless/boneless chicken breasts
1 pint (16-ounce) sour cream
1 can cream of chicken soup
1 can cream of mushroom soup
3 c. shredded cheddar cheese
8 ounce uncooked egg noodles
4 oz. Ritz crackers, crushed

Recipe Directions for Chicken Noodle Casserole

  1. Preheat oven to 350.

  2. Fry onions in butter. Pour into 9" x 13" baking dish.

  3. Cook chicken breast thoroughly and tear into chunks.

  4. In large bowl combine chicken chunks, sour cream and soups. Stir in 2 cups of shredded cheddar cheese. Stir in uncooked egg noodles.

  5. Pour mixture over onions in baking dish.

  6. Top with remaining 1 cup cheese and crumbled crackers.

  7. Bake 30 minutes or until top is golden brown and noodles are soft.
