Recipe Ingredients for Chicken with Mushrooms

4 cups sliced mushrooms
3 tbsp Country Crock Light
4 chicken breast, skinless
2 eggs, beaten
1/2 cup seasoned bread crumbs
6 ounces mozzarella cheese, sliced
2 cups chicken stock
2 tsp cornstarch

Recipe Directions for Chicken with Mushrooms

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Saute mushrooms in a tablespoon of the margarine spread until brown and liquids are released. Place half of the mushrooms in a 9x13 inch pan.

  3. Dip chicken into beaten eggs, then roll in bread crumbs. In skillet, melt remaining margarine/butter. Brown both sides of chicken in skillet.

  4. Place chicken on top of mushrooms, arrange remaining mushrooms on chicken. Add chicken broth to pan.

  5. Bake in preheated oven for 30 minutes, or until chicken is no longer pink and juices run clear. Remove from oven, top with cheese, and return to oven for 5-10 minutes.

  6. Drain liquids from pan into skillet, add cornstarch, and create a sauce from leftover stock.
