Healthier version of Paula Dean's Chicken Georgia.

Recipe Ingredients for Chicken & Mushrooms

1 tbsp smart balance
1 chicken breast
2 cups mushrooms
1 tbsp scallions
1/4 tsp salt
1 dash of pepper
1/8 cup parmesan cheese

Recipe Directions for Chicken & Mushrooms

Melt smart balance or butter over medium heat. Add mushrooms, saute until starting to brown. Add scallions and sprinkle with salt and pepper. Add chicken and cook 10 minutes on each side, or until done. Transfer chicken to platter and sprinkle with grated cheese. Top with mushroom mixture. Cook and let stand 5 minutes or until cheese melts
