Recipe Ingredients for Chicken, Mushroom, Wild Rice Cassarole

2 lbs. boneless, skinless chicken breasts - trimmed
1/2 cup wild rice
1 tablespoons olive oil
2 leeks
1 1/2 lbs. mushrooms - sliced
1 cup cooking sherry
1/4 cup flour
2 cups non-fat milk
1/4 cup grated Parmesan cheese
3/4 cup non-fat sour cream
1/3 cup parsley
2 cups green beans - French cut (frozen)
1/4 cup sliced almonds

Recipe Directions for Chicken, Mushroom, Wild Rice Cassarole

  1. Cook the wild rice - set aside

  2. Poach the chicken breasts - after cool cut into pieces

  3. Saute the leeks and the mushrooms in the olive oil

  4. Add the sherry

  5. Sprinkle the leeks and mushrooms with flour; stir to coat

  6. Add the milk

  7. Cook together for 1 minute - stirring

  8. Stir in the Parmesan cheese, sour cream, parsley, sea salt and fresh ground pepper

  9. Please wild rice in bottom of cassarole dish

  10. Add the cooked chicken pieces

  11. Add the frozen green beans

  12. Pour the sauce over the green beans

  13. Sprinkle with the almonds

  14. Bake for 30 minutes at 350 degrees
