Chicken and Mushroom Vegetable Stew Recipe

Yummy filling and great for wintery cold days mopped up with a chunk of fresh crusty bread.

Recipe Ingredients for Chicken and mushroom vegetable stew

1 tablespoon olive oil
300 grams chicken style pieces - chilled
1 medium onion, chopped finely
2 garlic cloves, chopped finely
2 oz mushroom, sliced
3 oz carrots, sliced
3 oz parsnips, sliced
3 oz swede, cut into chunks
3 oz potato, cut into chunks
1 1/2 oz leeks, sliced
400 grams canned tomatoes, chopped with juice
1 tablespoon tomato puree
1/2 tablespoon worchestershire sauce
1 teaspoon mixed herbs
1/2 teaspoon bay leaf
1 pint boiling water
0.18 oz (5g) bouillon - swiss vegetable, powder
1 salt and pepper, season to taste

Recipe Directions for Chicken and mushroom vegetable stew

Heat oil and fry off the onions until soft, add the garlic and fry for a further 2 minutes, then add all other vegetables except for the tomatoes and potatoes and place lid on pan on a low heat and saute the vegetable for about 5 - 10 minutes, then add the chicken style pieces and brown slightly, stirring constantly. Now add the worchestershire sauce, tomatoes, tomato puree and 1/2 of the stock and stir and mix well, season to taste and add the herbs and bay leaf, simmer for 20 minutes - 30 minutes with lid on on a low simmering heat or until vegetables are soft and cooked to how you like them, adding more stock if you run out of liquid whilst cooking. Once cooked serve with a generous chunk of fresh bread.
