Recipe Ingredients for Chicken and Mushroom Turnovers

1 tbsp olive oil
8 oz white mushrooms, coarsely chopped
8 oz portabella mushrooms, coarsley chopped
3 tbsp parsley, chopped
2 scallions, sliced thin
2 oz skim milk ricotta cheese
2 oz light cream cheese
17 oz puff pastry, thawed
8 oz chicken breast, poached and cubed
3 cup spinach , fresh,steamed
1 cup carrots,chopped and steamed

Recipe Directions for Chicken and Mushroom Turnovers

  1. preheat oven to 450

  2. cook mushrooms with oil.

  3. remove mushrooms from heat and add the remaining ingredients

  4. roll puff pastry out to 11 inch square

  5. cut into fourths-- place 1/8 of the filling in each pasrty square

  6. fold over to make a pocket- and crimp with a fork -- vent with 2 cut on top

  7. Bake for about 18 minutes or until nice golden brown
