Recipe Ingredients for Chicken Mushroom Spinach Dish

1/2 breast, bone and skin removed Chicken, Breast, Meat Only
1/2 container MINUTE Ready to Serve Brown
1/2 cup chopped raw Sliced Baby Bella Mushrooms Packaged
1 cups Baby Spinach
1/2 serving (Pacific) Organic Low Sodium Chicken Stock
1/4 cup Ricotta, Part Skim Milk Cheese
1 wedge Light Garlic

Recipe Directions for Chicken Mushroom Spinach Dish

  1. Chop and saute mushrooms in a pan with no stick spray or a little olive oil.

  2. Remove Mushroom and add chopped up chicken breast to brown.

  3. When it is almost done add spinach to wilt.

  4. In a casserole dish, add ricotta cheese and a wedge of the Laughing cow cheese, chicken broth and mix.

  5. Add the chicken, mushrooms, wild rice and spinach to the dish and mix.

  6. If it is a little soupy mix in a Tbsp or two of whole wheat flour, it will thicken up during baking.

  7. Season with salt, pepper, garlic, italian seasonings to taste.

  8. Bake at 350 for 30 minutes or until it is hot throughout.

  9. Serve.
