Not authentic but still quite tasty.

Recipe Ingredients for Chicken & Mushroom Korma

2 tbsp extra virgin olive oil
1 1/2 cups onion, chopped
2 cups mushrooms, sliced
1 1/2 cups chicken breast, boneless, skinless, cut into bite-sized pieces
1/2 cup chicken stock
2 cups diced tomatoes
1/2 tsp chili powder
1/4 tsp crushed red pepper
1/2 tsp ground ginger
1/2 tsp turmeric
1 tbsp cumin
1 tsp light brown sugar
1/8 tsp salt
1/4 tsp black pepper
1/2 cup half-and-half
2 cups baby spinach

Recipe Directions for Chicken & Mushroom Korma

  1. Heat olive oil in a saucepan on medium heat, then add onion. Saute about 3-4 minutes, then add chicken, mushroom, and chicken stock. Saute for about 10 minutes, or until the chicken looks like it is starting to cook through.

  2. Next, add diced tomatoes and the next eight ingredients to the pan and stir well so that everything is evenly mixed. Wait for the mixture to come to a boil, then reduce heat and cover. Let it simmer for about 45 minutes (the longer, the better).

  3. When you're almost ready to serve, stir in spinach and half-and-half. Recover and cook for 4-5 more minutes.
