Recipe Ingredients for Chicken and Mushroom Gravy Dinner for 2 - TOC

16 oz chicken thighs, 4 (4oz) thighs raw
1/2 can cream of Mushroom soup, condensed
1 tsp chipotle pepper
1 tsp olive oil
1 medium onion, sauteed
1 roasted red pepper
2 oz mushrooms, sauteed
1 oz dry white wine
4 oz peas, steamed
1 large baked potato

Recipe Directions for Chicken and Mushroom Gravy Dinner for 2 - TOC

  1. Preheat oven to 350 degrees.

  2. Saute chopped onion, roasted bell pepper and 2 oz mushrooms in 1 tsp olive oil. Use 1 oz wine to mix and allow alcohol to cook off.

  3. With kitchen shears or knife, remove 50-75% of fat from thighs.

  4. Add 1/2 can of cream of mushroom soup to baking dish.

  5. Add 1 tsp chipotle pepper to soup and stir

  6. Cook for 15 minutes.

  7. Flip chicken thighs over, and cook for an additional 10-15 minutes depending on thickness of thighs, spooning gravy over chicken and vegs.
