Recipe Ingredients for Chicken and Mushroom cream

12 ounce skinless chicken breasts
15 ounce cream of mushroom soup
1 cup of portabella mushrooms (sliced)
1 tablespoon olive oil
1/2 teaspoon salt
3 tablespoons parmesan cheese
1/2 cup of organic reduced fat milk

Recipe Directions for Chicken and Mushroom cream

  1. Season chicken breasts with salt

  2. Heat olive oil on a medium sized skillet over medium high heat

  3. Add chicken breasts to skillet and cook until golden brown on both sides and juices run clear

  4. Remove breasts from heat and set aside

  5. On a separate bowl mix cream of mushrooom soup and milk.

  6. Add to skillet and lower heat to medium low.

  7. Add sliced mushrooms to soup and allow to simmer for 5 minutes.

  8. Add chicken breasts to the soup mixture and cover them well with the cream of mushroom soup.

  9. Sprinkle with parmesan cheese and lower heat to medium low. Allow to simmer for 5 - 10 more minutes, covering skillet for the remaining time.

  10. Remove from heat and serve with preferred steamed vegetable (broccoli or asparagus are a good choice)
