Recipe Ingredients for chicken and mushroom casserole

350 g chicken breast, cut into strips
300 g mushrooms, assorted
1 clove garlic
1 oz rum
2 tbsp cornstarch
1 tbsp olive oil
2 1/2 cups chicken stock
1 oz evaporated milk
2 oz whole milk
1/2 tsp sage
1/2 tsp salt
1/2 tsp pepper
1 tbsp chopped fresh parsley

Recipe Directions for chicken and mushroom casserole

  1. Preheat oven to 350

  2. Sprinkle chicken with a little cornstarch to coat, then brown in a large skillet with a little oil over medium heat. Transfer to a casserole.

  3. Deglaze the pan with rum and and a little stock, and add the brownings to the casserole.

  4. Use a little more oil in the pan, and add the mushrooms. Cook for a couple of minutes, then add the garlic. Cook until mushrooms are tender.

  5. Sprinkle with cornstarch and stir until shrooms are coated. Add the stock, sage, salt and pepper, and bring to a simmer while stirring.

  6. Stir in the milks, then pour the mixture over the chicken.

  7. Bake in the oven for 30 minutes

  8. Sprinkle with 1 Tbsp chopped fresh parsley when serving.
